Abstract

the defatted seeds of Oenothera biennis (DSOB) are a by-product of evening primrose oil production that is currently not used efffectively. in this study, we evaluated the nutritional value (carbohydrates, proteins, minerals, fat, organic acids, and tocopherols), polyphenol content (phenolcs, flavonoids, and hydrolyzed polyphenols), and antioxidant activities of DSOB and seeds of Oenothera biennis (SOB) using analytical hierarchy process (AHP). As a result, the carbohydrates, proteins and minerals content of DSOB was found to be increased compared to SOB. DSOB contains large amounts of fiber, low levels of sugars, and is rich in calcium and iron. DSOB is also a good source of polyphenols and showed considerable antioxidant capacities (scavenging of DPPH, ABTS, nitric oxide, peroxynitrite, and hydroxyl radical). And the results of the AHP show that DSOB exhibits good nutritional value and bioactivities (polyphenol content, scavenging of DPPH, ABTS, nitric oxide, peroxynitrite, and hydroxyl radical). these results imply that DSOB is a potential ingredient for functional foods providing great economic and environmental benefits.
